Overview
- Ingredients
1 package of Hurst's 15 beans mix
1 pound of smoked sausage or ham chopped
2 16 oz jars of medium garlic salsa (I use Newman's Own)
1 can of garlic fire roasted diced tomatoes
2 tablespoons of minced garlic
1 large yellow onion chopped
8 cups of chicken broth
1 medium zuccini sliced and cut slices in half
1 small lemon
Salt and Pepper to taste
Directions
After washing and draining the beans, put beans in a large pot and soak in 2 quarts of water for 8 hours. (Set ham flavoring packet aside) Next, drain the beans and put them in a crock pot. Add the chicken broth, salsa, minced garlic, fire roasted tomatoes, onion, smoked sausgage or ham, zuccini, salt and pepper, and the juice of one small lemon. Stir ingredients and cover. Cook on low for 4 hours. Add in ham flavoring packet and cook for 1 more hour.
Note
I fry the smoked sausage before adding it to the soup but you don't have to. You can add summer squash or other veggies of your choice. I sometimes add a dash of chili powder too. I serve this dish with dinner rolls or honey cornbread.
